Spirulina Energy Balls

These are one of the quickest homemade snacks you can make - and you only need 6 ingredients!

Ingredients

  • 1 cup almonds
  • 1/2 cup GF oats (or standard oats if you're not GF)
  • 1 tablespoon spirulina
  • 1/2 cup peanut butter
  • 1 cup of pitted dates
  • Dissected coconut, for coating

Method
Whizz up your dry ingredients in the blender (almonds, oats & spirulina) then add your peanut butter and dates and pulse until well mixed. You should have a sticky mixture that can then be rolled into small bitesize balls. Pop the dissected coconut into a bowl and coat each ball before placing onto a plate or baking tray. Refrigerate for 1 hour before devouring. They can be kept in the fridge in an airtight container for up to 2 weeks or frozen for up to 3 months.

A really quick and tasty little homemade snack that is free from refined sugar, gluten and dairy. YUM!
